Ingredients:
For the chocolate biscuit:
Flour - 200 g
Sugar - 200 g
Cocoa powder - 50 g
Baking soda - 1.5 tsp.
Soda - 0.5 tsp.
Salt - a pinch
Eggs - 3 pcs.
Milk - 150 ml
Vegetable oil - 100 ml
Vanilla extract - 1 tsp.
Boiling water - 150 ml
For the cream:
Whipped cream (30-35% fat content) - 500 ml
Powdered sugar - 100 g
Vanilla extract - 1 tsp.
For the cherry layer:
Cherries (fresh or frozen) - 300 g
Sugar - 100 g
Cherry juice - 200 ml
Starch - 2 tbsp.
For the chocolate shavings:
Dark chocolate - 200 g
Preparation:
Preparation of chocolate biscuit:
Preheat the oven to 180 degrees Celsius.
In a bowl, mix together the flour, sugar, cocoa powder, baking powder, baking soda and salt.
In a separate bowl, whisk together the eggs, milk, vegetable oil and vanilla extract.
Pour the liquid ingredients into the dry ingredients and mix until smooth.
Pour in the boiling water and mix quickly.
Pour the batter into two molds and bake for 25-30 minutes.
Cool the biscuits and cut them into two layers.
Preparing the cherry layer:
In a saucepan, mix the cherries, sugar and cherry juice.
Cook over medium heat until cherries are soft.
Add the starch diluted in a small amount of water and cook until thickened.
Cool the cherry filling.
Preparing the cream:
Beat the cream with powdered sugar and vanilla extract to stiff peaks.
Preparing the chocolate shavings:
Grate the dark chocolate on a grater or use a knife to cut it into thin wafers.
Assembling the cake:
Place the cherry filling and a little whipped cream on the first layer of sponge cake.
Repeat with all the layers of sponge cake.
Spoon the remaining whipped cream over the cake.
Decorate the cake with chocolate shavings and the remaining cherries.
Serving:
Place the cake in the refrigerator for a few hours before serving.
